Mother lion rescues cub from perilous plunge

A lion cub who slipped off the side of a cliff hung on for dear life while his mother and fellow lionesses looked on at the Masai Mara game reserve in Kenya. His plaintive cries for help were heard by the pride and a trio of lionesses attempted to scale down the cliff but pulled back due to the sheer drop. Eventually, the cub’s mother gingerly climbed down the cliff and snapped up her baby boy with her jaws. Mother and son slowly made the trek back up where the cub was given a tongue lashing by the doting lioness. I think this shows that there’s nothing stronger than a mother’s love for her baby, where she’d risk her own life to save her son.

Modernist Cuisine: The Art and Science of Cooking

Modernist Cuisine Trailer from Modernist Cuisine on Vimeo.

A revolution is underway in the art of cooking. Just as French Impressionists upended centuries of tradition, Modernist cuisine has in recent years blown through the boundaries of the culinary arts. Borrowing techniques from the laboratory, pioneering chefs at world-renowned restaurants such as elBulli, The Fat Duck, Alinea, and wd~50 have incorporated a deeper understanding of science and advances in cooking technology into their culinary art.

(Click photos to view in HD – depends on your screen resolution).

In Modernist Cuisine: The Art and Science of Cooking, Nathan Myhrvold, Chris Young, and Maxime Bilet–scientists, inventors, and accomplished cooks in their own right–have created a six-volume, 2,400-page set that reveals science-inspired techniques for preparing food that ranges from the otherworldly to the sublime. The authors and their 20-person team at The Cooking Lab have achieved astounding new flavors and textures by using tools such as water baths, homogenizers, centrifuges, and ingredients such as hydrocolloids, emulsifiers, and enzymes. It is a work destined to reinvent cooking.

How do you make an omelet light and tender on the outside, but rich and creamy inside? Or French fries with a light and fluffy interior and a delicate, crisp crust that doesn’t go soggy? Imagine being able to encase a mussel in a gelled sphere of its own sweet and briny juice. Or to create a silky-smooth pistachio cream made from nothing more than the nuts themselves. Modernist Cuisine offers step-by-step, illustrated instructions, as well as clear explanations of how these techniques work. Through thousands of original photographs and diagrams, the lavishly illustrated books make the science and technology of the culinary arts clear and engaging. Stunning new photographic techniques take the reader inside the food to see cooking in action all the way from microscopic meat fibers to an entire Weber grill in cross-section. You will view cooking and eating in a whole new light.

A sampling of what you’ll discover:

– why plunging food in ice water doesn’t stop the cooking process
– when boiling cooks faster than steaming
– why raising the grill doesn’t lower the heat
– how low-cost pots and pans can perform better than expensive ones
– why baking is mostly a drying process
– why deep-fried food tastes best and browns better when the oil is older
– how modern cooking techniques can achieve ideal results without the perfect timing or good luck that traditional methods demand

Many invaluable features include:

– insights into the surprising science behind traditional food preparation methods such as grilling, smoking, and stir-frying
– the most comprehensive guide yet published on cooking sous vide, including the best options for water baths, packaging materials, and sealing equipment; cooking strategies; and troubleshooting tips
– more than 256 pages on meat and seafood and 130 pages on fruits, vegetables, and grains, including hundreds of parametric recipes and step-by-step techniques
– extensive chapters explaining how to achieve amazing results by using modern thickeners, gels, emulsions, and foams, including example recipes and many formulas
– more than 300 pages of new recipes for plated dishes suitable for service at top-tier restaurants, plus recipes adapted from master chefs including Grant Achatz, Ferran Adrià , Heston Blumenthal, David Chang, Wylie Dufresne, David Kinch, and many others.

From the professional chef to the home cook, Modernist Cuisine is an indispensable guide for anyone who is passionate about the art and science of cooking.

Within a 4,000 square foot cooking lab (not kitchen, this is definitely a lab) tricked out with vacuum distillation machines, CVAP ovens, rotary evaporators, immersion circulators, and centrifuges, the Modernist Cuisine team experimented, played, and exhaustively documented what Myrhvold sees as a revolution in the art of cooking.

Rumor: iPhone 5 Coming Soon

We have yet to receive official word on this, but All Things Digital is reporting today that Apple’s next big media event will be held on October 4th, where freshly minted CEO Tim Cook is expected to unveil the iPhone 5. Sources close to the situation say Cook will be the main presenter at the event, with execs Phil Schiller, Scott Forstall and Eddy Cue playing supporting roles. This would mark the first time that Cook has actually led an Apple event, adding an extra wrinkle of significance to an already highly anticipated occasion. The site’s sources went on to say that the next-gen iPhone will be available for purchase “within a few weeks” of the announcement, though All Things Digital acknowledges that the exact date of its unveiling is still subject to change.

Saint Genius + W-Base + FTC: FOR THE COUNTRY Featuring Nasty & Marco

After Japan was hit with the devastating earthquakes, tsunami and nuclear meltdown earlier this year, time’s have been tough for the people. This short documentary follows two talented Japanese fixed gear freestyle riders Teppei ‘Nasty’ Iwabuchi and Yuhei ‘Marco’ Hirose, on their first trip to San Francisco. Saint Genius shot the footage of the W-Base and FTC sponsored riders. Their skills on a fixie are very impressive, but what I found more moving was hearing their stories of how their positive attitudes and the Japanese pride in their culture has helped them overcome the natural disasters in Japan. I’ve got a lot of respect for these to dudes and wish them all the best in their future careers.

The Story Behind Ferrari’s Logo

Great watch to see the history and origin of the Ferrari logo –

“The horse was painted on the fuselage of the fighter plane of Francesco Baracca — a heroic airman of the first world war. In ’23, I met count Enrico Baracca, the hero’s father, and then his mother, countess Paulina, who said to me one day, ‘Ferrari, put my son’s prancing horse on your cars. It will bring you good luck’. The horse was, and still is, black, and I added the canary yellow background which is the colour of Modena.”

adidas Office Interior by KINZO

The adidas headquarters in Herzogenaurach, Germany has had a facelift. The 1,700 staff members moved into an amazing new work space that features intertwining glass walkways made to mimic the laces of a sneaker. Berlin design company KINZO set out to create something that would reflect adidas inside and out. The “Teamplayer” space is at the heart of the new design, supporting desktops, storage and creating a multi-functional room that looks like it’s zoned into honeycombs. In other words, the KINZO design team have created a space within a space. It lets separate teams have a specific section, but not be completely cut off from the other groups working inside the “Teamplayer”. The entire WORKOUT furniture system is designed specifically to meet the needs of the team, and work together as a system, rather than functioning as just individual pieces. German furniture specialist Planmöbel partnered with KINZO to create environmentally friendly, functional furniture sealed with a monolithic surface and a powder-coated finish.
